Our Agave fields are situated in the renowned Tequila Valley, a volcanic area with mineral-rich soils. It takes approximately seven years for the plants to fully mature before being harvested. Yes, indeed! Seven years of growth absorbing nutrients and minerals from the soil. This is why the blue Agave plant boasts intense flavor and high sugar content.
Tequila Rejoneo Blanco is made from 100% blue Agave. After harvesting, the agave undergoes a gradual steam-roasting process (36 - 54 hrs), followed by the extraction of sugar juice and a slow fermentation period (48 - 60 hrs).
We use a double slow distillation process in pot stills; Tequila Rejoneo Blanco is bottled directly after distillation, as an unaged spirit, it is not rested in barrels, preserving the authentic Agave flavor, without the infusion of aromas and flavors from wood.
Consequently, many Tequila connoisseurs prefer to indulge in the unaged spirit.
